The 2021 SV Shiraz was sourced exclusively from the Dallwitz block (DW96 VSP), Hoffmann DV.
Hand-picked 11th March 2021 and destemmed into one tonne open fermenters. 10-15% of clusters were retained as whole bunch. Skin contact ranged from 12-14 days with an initial 72 hour cold soak. Pressed to a near new French Oak puncheon and a seasoned French Oak hogshead barrel.
Bottled on 20th December 2022 after 20 months elevage. 1025 Bottles Produced, 14.8% alc/vol
